Feast at Inman Park's Savi Market
I just read that pizza chains’ sales are up in this recession. We’re talking about Pizza Hut, Domino's and Papa John’s. A recent ABC-TV report said that in this sluggish economy, cheap sells. To me, that’s a bit of a shame. I like to support my locals who put their original interpretation on a dish like pizza. I hope the neighborhood restaurants are doing well because in these tough economic times, it’s tough to eat well and local. It’s all too tempting to hit a fast-food chain when the food is quick and cheap.
The folks at Savi Urban Market have done something about eating what's good for you while being affordable. No, Savi is nowhere near here. I asked the owners to think about locating a unit in Peachtree Corners. They’ll think about it. The closest market is in Inman Park. If you’re looking to buy local, fresh and easy-to-prepare food, make the trek to this neighborhood market in a well-preserved brick building on Atlanta’s Elizabeth Street. High quality affordable gourmet products fill the market’s shelves in addition to a premier beer and wine selection. The market even features an Enomatic wine serving system where customers can sample scores of wines before committing to purchasing a bottle. I confess that it’s a very good idea, but I still like a live professional conducting a wine tasting session.
Savi uses the Sous Vide technique, according to their official literature, it is French for "under vacuum and describes a method of cooking in vacuum-sealed plastic pouches at low temperatures for long times." Sous Vide has been around since the mid-1970s and is used by scores of fine dining restaurants. The results are stunning. I sampled some of Chef Don Trimble’s creations including his own Scallops, Lardo, Rhubarb; Veal Cheeks; Piedmontese Strip Loin; Berkswell Raw Sheeps Cheese; and a very interesting dessert, Berkshire Belly Preserved Pears.
Owner Paul Nair works closely with Loganville’s Dillwood Farms to bring the freshest local ingredients to the table. Dillwood Farms’ Doug and Rosetta Dillard along with their staff, work hard to cultivate the most awesome products to the market.
